It's Wine Down Wednesday Lazy Girls!

Today I'm going to talk about chicken, and of course, wine. 

A chicken dinner is one of those over used underappreciated can't fail meals.  Chicken is the little black dress of the food world.  It can be dressed up, think Chicken Tikka Masala, the equivalent to pairing your little black dress with classic pumps and pearls. It can be dressed  down, think hot wings, the equivalent to pairing your little black dress with kicks and a jean jacket.  One just as fantastic as the other. 

  When I'm on my cooking game, I keep chicken in my freezer for the those nights when I want to cook, but don't want to think too hard about it.  You can't lose with chicken.  You also can't lose with a good Cab Sav.  I know I talked about the Cabs last week, but gimme a break. Cabernet Sauvignon is having a moment with me right now.

I've recently rediscovered the glory of chicken thighs.  Like chicken itself, the thighs don't get enough shine. We're always fawning over the breasts or the wings, but the thighs pack a flavor punch that should not be ignored.  On top of that, they don't dry out as easily while being cooked and better still, thighs tend to be less expensive than breasts.  You know that means don't you? That's right, more money for the good wine!

I paired my Cab with spicy baked chicken thighs over a bed of sautéed spinach. Sounds fancy doesn't it? Trust me, it wasn't, but it was easy and delicious.  

You heard it here first, chicken thighs are the new black!
